Carolina Erazo


This fiery Latina born and raised in Toronto, Carolina has made waves in the Toronto cocktail scene for the last decade. Having worked with well-known hospitality groups including The Chase Hospitality Group as well as the Donnelly Group, her palette for creating unique, flavourful and well-balanced cocktails sets her apart from the rest. In March 2019, Carolina became the head bartender and mixologist for Bar Reyna in Yorkville. In September 2020, she was promoted to Beverage Director for the company and is responsible for all the wine and cocktail lists for Reyna restaurants.

A natural born visionary, her passion for the culinary world is what lead her to mixology combining her love of food and drink. She values health, sustainability and clean flavours therefore adding a unique wellness touch to some of her creations. She is the co-creator of the cocktail creations for Reyna on the Rocks and we hope you enjoy!

Nicolle Chin-Lee


Toronto-born, Nicolle was raised in Montego-Bay Jamaica. She came back to Canada to attend University in 2008 and only returned to live in Toronto full-time in 2015. While travelling through Europe she realized her passion for food and beverage - namely its connection to culture. She became intrigued by the art of proper service and the thoughtful coordination that went into food and beverage pairings to create a memorable experience.

With an endearing character and eye for detail, Nicolle is focused on carving a place for herself in the Toronto food & beverage scene.  

After leaving her position as Assistant General Manager at Entice Lounge, Nicolle joined the Reyna team in 2019 and has since become the FOH Manager at Reyna on King. She has created a unique space for herself and instilled sustainability practices by maximizing all ingredients to
reduce waste and increase house made syrups, liqueurs and more.

As a recent graduate from the Advanced Food and Beverage Business Management program at George Brown College, Nicolle has a WSET level III award in wines and hopes to pursue level four diploma in the near future.
